Answer» Humans cannot digest cellulose because they do not possess the enzymes required to digest cellulose in their gut. Our gut has enzymes which digest starch. As you can see from the above picture, cellulose has beta-acetyl bonds and starch has alpha-acetyl bonds. Humans do not possess the enzymes needed to break down the beta-acetyl bonds. In fact no mammal has those enzymes produced by the body. |
