The small intestine receives the secretions from the liver and the pancreas. The BILE salts (from the liver) break down the LARGE FAT globules into smaller globules so that the pancreatic ENZYME lipase can EASILY act on them. Lipase enzyme breaks down dietary fats into smaller molecules called fatty acids and glycerol.This enzyme specifically digests butterfat in the food. From the stomach, the partially digested food goes into the small intestine where the pancreatic lipase breaks down the emulsified fats. The walls of small intestine secrete intestinal juice which converts the fats into fatty acids and glycerol. This is referred to as the emulsification of fats. This process takes place in the small intestine.
