Answer» Lactobacillus of lactic acid bacteria (LAB) are involved in setting milk into curd. A small amount of curd that contain Lactobacillus are added in milk, bacteria grows produces lactic acid that cause coagulation of protein in milk to form curd. LAB also increases vitamin `B_(12)` along with other vitamins in the curd.
