Solve : What OS for Home File Server??

I origanaly ran Win XP HOME on a Pentium III as my file server, when i got a dell PowerEdge Server i decided to get a OS that supported 2 processors, which mine has. I have a valid XP PRO license, but was told that CentOS is a more reliable, Linux based OS, that featured GNOME GUI, I LOVE ubuntu's GNOME GUI, but like the feel of windows, I just want a basic, print, file, and application sharing server, nothing too big or complicated

ThanksHow much time do you have to learn about a new operating system, other than Microsoft Windows? Yes, Linux/Unix/OS X/other operating systems are good, maybe better, maybe not, but they are fine when you know how to "play" with them. Before knowing you will have to study and experiment. Do you have time? Do you like to learn about a new operating system? Are you a system administrator/network administrator? Do you want to become one?

Of course there is ALSO the solution "jump in ocean and learn to SWIM", and I know some people that have that saying as motto.
