Sugar is soluble in water though it is a covalent compound.why?

Answer» Sucrose is a sugar and if you look at its structure there are a lot of OH groups these groups hydrogen bond to water and help to form a solvation sphere around the molecule. Ethanol has only one OH group it is less polar than water. There is a general adage that like dissolves in like, sucrose is polar, water is polar and so they dissolve, ethanol is less polar and so less like and therefore does not dissolve.
