rancidity is a natural oxidation chemical degradation of oils .

rancidity cause a change in a smell and taste of FATS oils or any food containing oil.


rancidity Occur due to process in which Easter present in oil FREE fatty ACID by reacting with air, moisture etc .



following are the method to prevent rancidity of fats foods :-

★ rancidity can be prevented by nitrogen packing

in this process the packaging of food material for example chips are packed with nitrogen.


★ we can use antioxidant like BHA ( buty lated hydroxyanisole )
and

BHT ( butylated hydroxytoluene )


★ we can also prevent rancidity by keeping the food away from sunlight



★ instead of keeping in the food material in open it is better to keep it into a refrigerator.
