| Answer» Pepsin\xa0is the chief digestive enzyme in the stomach that breaks down proteins. We see that chief cells produce pepsinogen (an inactive form of\xa0pepsin). Pepsinogen is converted to\xa0pepsin\xa0when the parietal cells found within the gastric glands secrete hydrochloric acid.\xa0Pepsin\xa0is a nonspecific protease which is only active at acid pH, and is irreversibly denatured at neutral or\xa0alkaline\xa0pH as it moves from the stomach into the duodenum. It is therefore essential to make up the\xa0pepsin\xa0solution from powder in an\xa0acidic\xa0buffer. | |
