What is rancidity? Mention any two ways by which rancidity can be prevented.

Rancidity: It is defined as chemical decomposition of oils and fats. In another words it is the spoiling of food materials difficult to consumed. 

It can be prevented by following methods: 

(i) While Packing food materials air should be by Nitrogen. 

(ii) The food materials should be placed at very low temperature. 

(iii)Addition of antioxidants also prevents rancidity process.
