Mastication or chewing, activates the saliva, salivary amylase is a digestive enzyme that acts on starch in food, breaking it down into smaller carbohydrate molecules. These enzymes also play a role in breaking down food particles entrapped within dental crevices, thus, protecting teeth from bacterial decay.
