When we boil water it does not raise up but when we boil milk why did it raise up

Because water is a homogenous mixture but milk is a heterogeneous mixture it consist of of fat in its upper most layer so when milk is boiled the fat come together to form a thin layer which you know as the cream and the water boiling inside the milk tends to come up inform of of of water vapours so these water vapours inflate that uppermost layer of malai so milk Rises up when it is boiled
