Why does mango have yellow colour in ripe

The mango peel contains several pigments of which chlorophyll is most noticeable when the fruit is still UNRIPE. When ripening, chlorophyll slowly breaks down which is when the other pigments become visible; RED and yellow. Just as happens in fall when leaves change color.

The color change is to make the fruit attractive to many animals which by eating the pulp help with the release and spread of the seed. We humans developed our red vision relatively late, when we started including FRUITS in our DIETS. In this way we COULD distinguish ripe from green. Red color is perceived by only view animals; primates and humans are examples. Plants and animals developed side by side, one depending on the other.
