Solution :When a fat is heated strongly in the PRESENCE of a dehydrating agent such as `KHSO_(4)`, the GLYCEROL portion of the molecule is dehydrated to FORM the unsaturated aldehyde acrolein, `CH_(3)CH=CHCHO`, which has the peculiar odour of burnt grease. This is the standard TEST for fats.
