Answer» Rancidity is defined as chemical decomposition of oils and fats which in another words is spoiling food materials that difficult for consumption. It can be prevented by following methods: (i) The packing of food materials should be replaced the air with Nitrogen. (ii) The food materials should be placed at very low temperatures. (iii) Addition of antioxidants also prevents rancidity process. RANCIDITY: It is the process of slow oxidation of oil and fats Present in food materials ( which are volatile in nature ) resulting in the change in taste and smell in them .
