What are emulsions ? What are their different types ? Give one example of each type.

Solution :These are liquid-liquid colloidal systems. If a mixture of two immiscible or partly miscible LIQUIDS is shaken, a dispersion of one liquid in the other is obtained which is called emulsion. There are two types of emulsions :
OIL in water : In such emulsions, water is the dispersion medium. EXAMPLES - Milk and vanishing creams are examples of this type of emulsions.
Water in oil : In such emulsions, oil ACTS as the dispersion medium. Examples - Butter and CREAM are examples of this type of emulsions.
