Answer» When food is damaged in such a way that it becomes unfit for consumption by human beings is called rancidity. When edible oils are stored for a longer period of time then oxidation occurs. There is carbon-carbon double bonds in fats and oils which are broken down by the oxygen in the free space or atmosphere. As a result, after a long period of time fats and oils become rancid. |
