This is because of the sodium CARBONATE that is formed as a product of heating baking soda during the process of baking. `2NaHCO_(3) overset("heat")rarr Na_(2)CO_(3) + H_(2)O + CO_(2)` (b) Addition of a mild edible acid (tartaric acid) to baking soda makes it baking powder. (C ) Tartaric acid NEUTRALISES the `Na_(2)CO_(3)` and forms sodium tartrate SALT. Hence the cake does not taste bitter. |
