What is meant by rancidity of food |

Answer» Food containing oils and fats which on oxidation(kept exposed to air)gives foul smell and bitter taste this is called rancid and the phenomenon is known as Rancidity Aerial oxidation of food when it come in the contact of oxygen and moisture which gives the unpleasant smell and spoil the food When oil or fat containing food materials when kept exposed to air or sunlight, then due to the oxidation they became bitter in taste and foul in smell called rancide and this phenomenon is known as rancidity ...
