Answer» It makes the medium acidic for working of pensin,it also kills the bacteria present in food and it also activate pepsin (1) make the medim acidic for working of pepsin. (2)to kill the germs present in the food. Hcl do not digest of protein it is give activeness to pepsin for digestion of protein HCl breaks down the protein into peptone + polypeptide by pepsin enzyme..
