When baking soda mixes with\xa0water,then\xa0sodium hydrogen carbonate\xa0reacts with tartaric acid to evolve carbon dioxide gas. \tBaking soda (sodium hydrogencarbonate) undergoes reaction with mild edible acid such as tartaric acid to manufacture baking powder. This baking powder on heating undergoes following reaction.\tThis carbon-dioxide produced makes bread or cake rise thereby making them soft and spongy.\tBeing alkaline it is also an active ingredient in antacids that acts by neutralising the excess acid produced in the stomach.\tIt is also used in soda-acid fire extinguishers. |
