Solve : Printer settings hijacked by Windows 8.1?

This is no good for the work I do. Now that windows has updated the driver with it's own windows version (which I did not authorize), I can no <a href="https://interviewquestions.tuteehub.com/tag/longer-1078655" style="font-weight:bold;" target="_blank" title="Click to know more about LONGER">LONGER</a> even pull up the Epson menu by clicking on properties in devices &amp; printers. It seems Windows knows <a href="https://interviewquestions.tuteehub.com/tag/better-895998" style="font-weight:bold;" target="_blank" title="Click to know more about BETTER">BETTER</a> than I what I wish to do with my printer.I uninstalled the printer &amp; reinstalled it, hoping to get the Epson driver installed again. Now, the printer menu gives me the plain paper option, but no control over quality of the printing &amp; still no access to saturation and manual color control. I don't understand why the developers of this software think that they can control our devices better than we can. Now my computer has evidently updated again, totally removed the driver for my printer &amp; installed a copy of the driver for the fax. I'm going to downgrade to Windows 7.
